It’s a Bird, It’s a pan…

It’s…an eggbake.

Or Fritata, or what you will. Here’s my new recipe:


  • 1 cast iron pan
  • 8 large eggs
  • 2 slices pepperjack cheese
  • 2 slices Oscar Meyer sliced turkey breast lunchmeat
  • 1/4 cup milk
  • 1 tablespoon butter
  • 1/2 large finely chopped zucchini
  • 5 finely chopped baby carrots
  • Garlic powder and onion salt to taste


  1. Preheat oven to 350 degrees
  2. Beat eggs until mixed and add to bowl
  3. Crumble or dice cheese
  4. Dice meat and add to eggs
  5. Pour in milk
  6. Saute zucchini and carrots in butter and mix in to bowl
  7. Shake in garlic powder and onion salt
  8. Bake for 25 minutes on center rack, and rotate pan in oven around the halfway point if your oven cooks more intensely in the back
  9. Turn off oven when eggbake is golden brown, and then let sit in cooling oven for another 10 minutes
  10. Let cool and enjoy

(makes 4 servings)

I sometimes find that I do not have the ingredients I want at hand, so I use what I have and sometimes I come up with a winner.  The eggbake worked even though I did not have onions, garlic, or other ingredients.
