Diet Helps: High Protein, Low-Fat Salad

Good for a tasty diet or go full-tilt:

Big bowl
3 large or many small leaves of your favorite lettuce (preferably not iceberg)
3.5 oz solid white albacore tuna (or any tuna) in water, drained
1/2 cup drained black beans
1/2 cup chopped bell pepper (mini-bells are tasty)
1/4 cup chopped carrots (3 mini-carrots are good cut-up)
1/4 cup diced tomato
1 broken-up wasa rye cracker
2 tablespoons olive oil
1-2 tablespoons balsamic vinegar (Star brand is good & cheap)

Full tilt (a little less tasty, but hard core for low fat, high protein) –
Substitute 1/2 cup plain, non-fat yogurt for oil & vinegar

Once in a great while I toss in some cheese, but not every time due to fat content.

Toss and enjoy…you’ll feel great!
